New Year’s Appetizers

New Year’s is right around the corner. Hopefully, you’ll be safely celebrating with family and friends, welcoming in 2021. Enjoy a variety of yummy appetizer recipes.

Bacon and Mushroom Roll-Ups Party Sandwich- Lauretta VanderLugt

Ingredients
  • 4 slices of bacon, diced
  • 2 1/2 cup finely chopped mushrooms
  • 1 onion, minced
  • 4 oz. cream cheese
  • 15 slices sandwich bread
  • 1/4 cup butter, melted
Directions

In a skillet, cook bacon, mushrooms, and onion for 5-8 minutes or until tender (NOT CRISP). Stir in cheese until melted and set aside. Trim crust from bread and flatten slices slightly with a rolling pin. Spread each slice with about 2 tablespoons of bacon, mushroom, and onion mixture and roll up jelly-roll fashion. Secure with toothpicks. Place seam side down on the baking sheet. Cover and chill for at least 2 hours. Brush rolls with melted butter. Bake at 375° F for 10-15 minutes or until lightly browned. Remove toothpicks, cut into thirds or halves. Serve warm. Makes 30-45 appetizers.

Dried Beef Roll-Ups

Ingredients
  • 1/4 cup softened butter
  • 1/4 cup mayonnaise
  • 1/2 cup grated Cheddar cheese
  • 2 tsp. Lawry’s Seasoned Salt
Directions

Blend butter, mayo, cheese and salt until smooth. Trim crust off white bread. Flatten with rolling pin. Spread with the spread you made above. Place slices of dried beef on top of spread. Roll up, hold with a toothpick. Place on a cookie sheet. Brush on melted butter. Bake at 350° F until brown for about 30 minutes.

Bacon Wraps- Brenda Manke

Ingredients
  • 2 lbs. bacon
  • 4 cans whole water chestnuts
  • 3/4 cup brown sugar
Directions

The night before making… drain 3 of the cans of water chestnut juice into a bowl, dump down the drain the fourth can of water chestnut juice. Stir in the brown sugar and add all the water chestnuts. Let sit overnight to marinate. Cut bacon strips in half and wrap around individual water chestnuts using a toothpick to hold them in place. Place on a cookie sheet and bake at 350°F for the first few minutes. Then turn on the broiler and broil until bacon is nice and brown. Remove from oven and place in the slow cooker on low heat.

Baked Stuffed Shrimp

Ingredients
  • 2 lbs. cooked, shelled large shrip
  • 1 (6 oz.) pkg. chicken flavored stuffing mix
  • 1 large egg, lightly beaten
  • 1/2 cup melted butter
  • 1 clove garlic, minced
  • chopped parsley
  • lemon wedges
Directions

Preheat oven to 475° F. Butter a large shallow baking dish. Cut shrimp with a sharp knife along the rounded edge of the back, almost all the way through. Prepare stuffing mix as directed on package. Dip shrimp in beaten egg. Place a rounded tsp of stuff between the cut edges of the shrimp press shrimp and stuffing firmly together. Arrange stuffed shrimp in a prepared baking dish. Mix melted butter and garlic in a small bowl. brush shrimp with butter mixture. Bake until stuffing is slightly browned and cooked through, about 8 minutes. Sprinkle with chopped parsley and serve with fresh lemon wedges on the side.

Zippy Beef Olive Spread

Soften 1 tsp. instant minced onion in 1 tsp. dry sherry, add 1 (8oz.) pkg. softened cream cheese, 2 tablespoons salad dressing. Stir in 1 (3 oz.) pkg. smoked sliced beef (finely snipped) and 1/4 c. chopped pimiento-stuffed green olives. Spread on crackers or cocktail bread.

Bacon Broccoli Cheese Ball- Donna Hulstein

Ingredients
  • 1 pkg. (8 oz.) cream cheese
  • 1 (4oz.) pkg. shredded Cheddar cheese
  • 1/2 tsp. pepper
  • 1 cup finely chopped broccoli florets
  • 6 bacon strips, cooked and crumbled
  • assorted crackers
Directions

In a mixing bowl, beat cream cheese, Cheddar cheese, and pepper until blended. Stir in broccoli. Shape into a ball and roll in bacon. Cover and refrigerate. Remove from the refrigerator 15 minutes before serving. Serve with crackers. Yield 2 1/2 cups.

Beef Cheese Ball- Kathy Walhof

Ingredients
  • 2 (8oz.) cream cheese
  • 1 (4 oz.) pkg. shredded Cheddar cheese
  • 5-6 pieces of dried beef
  • 2-3 tbsp mayonnaise
  • 2-3 tsp. diced onion
  • 1/4 tsp. Worcestershire sauce
  • pinch of garlic salt
  • chopped pecans
Directions

Mix all ingredients together EXCEPT the chopped pecans. Form into 2 balls and roll each ball in chopped pecans. Prepare at least 24 hours in advance before serving. Refrigerate.
