A “Plate Full” of Cookie Recipes

Last week I promised you a “plate full” of cookie recipes and that’s just what I am going to do. Grab a cup of coffee or tea and enjoy some great cookie favorites from the Girls Fellowship Club, East Friesland CRC, Friesland Wisconsin.

Bohemian Yeast Cookies

Ingredients for dough
  • 1 pkg. yeast
  • 1/4 c. warm water
  • 3 cups sifted flour
  • 3/4 tsp. salt
  • 1 c. butter
  • 2 egg yolks
  • 2/3 c. sour cream
  • 1 tsp. vanilla
  • Confectioners sugar or cinnamon
Directions

Sprinkle yeast over warm water. Sift together flour and salt. Cut in butter until the mixture resembles meal. Combine eggs, cream together add vanilla. Add yeast. Add until all flour is moistened, shape into a ball, cover, refrigerate several hours.

Sprinkle rolling pin cover or canvas with powdered sugar. Roll 1.4 of the dough into a rectangle as thin as pie crust. Cut into long strips 2 inches wide.

Ingredients for filling
  • 2 cups raisins or you may substitute dates
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 tbsp lemon juice
  • 1/2 cup chopped nuts
Directions

Put raisins through food chopper, using a fine blade. Add water, sugar, and lemon juice. Cook until thick, stirring constantly. Cool and add nuts.

Spread a thin layer of filling over dough strips. Cut 2×4 rectangle. Roll each like a jelly roll. Place cut side down on a greased baking sheet.

Repeat the above process rolling 1/4 of the dough at a time until all the dough has been used. Bake in a moderate over at 375 degrees F for 10 minutes.

Roll hot cookies in powdered sugar or sprinkle with cinnamon and powdered sugar. Makes 4 dozen.

Butterscotch Nuggets

Ingredients
  • 1/2 c. butter
  • 1/2 c. brown sugar (packed)
  • 1/4 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 2/3 cup flour
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. chopped nuts
  • Walnut halves
  • Chocolate Frosting- your own favorite recipe
Directions

Cream butter and add sugar creaming well again. Add egg and vanilla and cream well. Sift flour, salt, and soda. Add to creamed mixture. Blend. Add nuts, mix.

Drop by the spoonfuls onto the baking sheet. Make depression (with the back of a spoon) in the center of dough before baking and during baking.

Bake in moderate oven 375 degrees F for 10 minutes. Cool. Fill the center with chocolate frosting. Top with walnut halves. Makes about 50 cookies.

Holland Cookies- (Could there be ANY other cookie??!!) My bad… they are bars

Ingredients
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 cup lard
  • 2 cups flour
  • 2 cups oatmeal
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1/2 tsp allspice

Directions

Mix all together and press in 1 large or 2 small cookie sheets. Sprinkle with sugar. Bake 375 degrees F for 30-35 minutes. Cut when slightly cooled.

Meltaway Cookies

Ingredients

  • 1 cup soft butter
  • 1/2 cup sifted powder sugar
  • 2 1/2 cups sifted cake flour
  • 1 tsp. vanilla
  • 1/4 tsp. salt

Directions

Heat oven to 400 degrees F. Mix thoroughly butter, sugar, and vanilla. Sift flour and salt. Stir in well. Drop by teaspoonful unto ungreased baking sheet. Bake about 9 minutes until set but NOT browned. While still warm roll in powdered sugar. Cookies should be about the size of a quarter.

The following variations maybe made:

  • Peppermint Cookies: Substitute 1 tsp. peppermint extract for vanilla. A few drops of green or red food coloring to make colored cookies.
  • Almond Cookies: Substitute 1 tsp. almond extract for vanilla. Top with blanched almond halves, Bake as above.
  • Orange Ambrosia Cookies: Substitute 1 tsp. orange extract for vanilla. Add 1/2 cup flaked coconut to dough. Bake as above.

Oatmeal Refrigerator Cookies

Cream together: 1 cup shortening, 1 cup brown sugar, 1 cup white sugar and 2 eggs.

Sift together and add: 1 1/2 cups flour, 1 tsp. soda, 1 tsp salt

Add: 2 1/2- 3 cups quick oatmeal, 1 tsp. vanilla, 1/2 cup chopped nutmeats

Mix all together. Shape in long rolls. Chill overnight. Slice and bake 400 for 8-10 minutes.

Well friends, there you have it, a “plate full” of cookie recipes. I am only allowed so much space but I could have gone on and on! I tried to find cookies of the past that are not as familiar. A cookie resurrection of sorts! Hope you enjoy some fun times with your family or friends.
